Confinement Food Day 2

Googled for more Confinement recipes, coz I wanted to give Jie some variety instead of repeating the previous day's menu, and found some easy to cook yummy pieces!!

Prepared the garlic & ginger on the pretty chopping board!!! =D

Confinement food is normally piled with ginger which is said to help to clear the wind inside the body.

Stir-Fried French Beans with Minced Pork
French Beans are a rich source of iron, vitamin A, C, riboflavin, thiamin, proteins, omega-3 fatty acids, calcium, copper, phosphorous, manganese and dietary fibers. 


• Help to prevent anemia and diabetes 
• Help to keep a healthy digestive system 


(Serves 2-3)
200g french beans (kacang buncis, wu gui tou) 
200g minced pork
2 cloves garlic chopped
(additional 2-3 cloves to make fried garlic if you want to) 
80g old ginger chopped
3 tbsp little sesame oil
Salt & Pepper to taste
1 tbsp DOM (optional)


*Fried Garlic: Heat the oil and sauté the garlic until brown.






Method:
1) Chop of both ends of the french beans and cut into halves (3-4inch). Then wash and steam the beans until cooked. 


2) Heat the sesame oil and sauté the garlic and ginger until slightly brown.


3) Add the minced meat and stir fry until thoroughly cooked. Add the salt, pepper and DOM and mix well.


4) Dish up and pour over the steamed beans.


5) Garnish with *fried garlic and serve.

Stir-Fried Pork with Ginger & Scallion



(Serves 2-3)
- 200g pork (yor bak), sliced thinly and diagonally (against the grain)
- 80g old ginger sliced thinly
- 3 cloves garlic, minced
- 3 tbsp sesame oil
- 2 stalks spring onions (scallions), cut to 5cm/2-inch lengths
- 1 tbsp DOM (optional)
- 40ml water (optional)

Marinade (A)
- 1 tsp light soy sauce
- 1 tsp dark soy sauce
- 1/2 tsp fish sauce
- 1 1/2 tsp sesame oil

Method:
1) Marinate the pork slices in the marinade ingredients (A) for at least 5 minutes. 
2) Heat oil, fry ginger for 20 seconds. Then add garlic & spring onions (bottom white half) to the wok and stir fry till fragrant.

3) Add pork slices, stir fry till cooked. Add the rest of the spring onions.
4) If you like some gravy to go with your rice, add water. Drizzle some DOM onto the dish and mix. Off the flame. This dish is best served with steamed rice.

Egg Omelette in Sesame Oil
(Serves 1-2)
2 eggs
1 1/2 tbsp water
1 clove garlic chopped
1 tsp soy sauce
1/4 tsp salt
20g old ginger pounded finely or diced











Method:

1) In a small bowl, combine eggs, water, soy sauce and salt by whipping lightly with a fork.

2) Heat a wok over medium heat, add sesame oil, sauté garlic and ginger till fragrant.

3) Pour in egg mixture and fry until cooked, turning over occasionally.

4) Serve as a sandwich for breakfast or with rice for lunch.
